Strawberry Chia Pudding With Greek Yogurt
  1. Blend base: Add ½ pound strawberries, 1 cup Greek yogurt, ½ cup milk, 3 tablespoons maple syrup (or honey), and 1 teaspoon vanilla extract to a bowl. Blend with an immersion blender until smooth and creamy. (You can also use a regular blender, then pour the mixture into a bowl.)

  2. Add chia: Add 4 tablespoons chia seeds to the bowl. Whisk for about 30 seconds so there are no clumps. Cover the bowl, or divide into jars. Refrigerate for at least 2 hours, or overnight, until thick.

  3. Serve: Stir before serving. Top with sliced strawberries, nuts, and a drizzle of maple syrup if you like. Enjoy cold or warm a few seconds in the microwave.
