Mix zucchini, carrots, flour, baking powder, cinnamon, and salt in a bowl.
In another bowl, whisk honey, oil, egg, and vanilla.
Combine wet and dry ingredients. Stir until just mixed.
Pour batter into the pan. Bake for 45-50 minutes.
Let cool before slicing.
