Mississippi Subs
  1. Season chuck roast on both sides with salt, pepper, and garlic seasoning

  2. Sear roast on all sides in Instant Pot on sear setting or in a pan, then remove

  3. Add chopped onions and garlic to the pot, cook until translucent

  4. Add Worcestershire sauce and beef broth, deglazing the bottom of the pot

  5. Stir in au jus packet and pepperoncini peppers with juice

  6. Return beef to pot and close lid

  7. Pressure cook for 2 hours (or slow cook in crockpot for 6-8 hours on low)

  8. Allow natural pressure release

  9. Remove meat and shred using a masher or two forks, return to pot with broth

  10. Slice open sub rolls and spread mayo on buns

  11. Layer shredded beef and provolone cheese on rolls

  12. Toast buns in oven at 350-400°F or under broiler until golden and cheese melts

  13. Serve immediately
