Italian Kale Chickpea Soup
  1. Heat a large pot with olive oil.

  2. Add diced sausage and brown on both sides. Remove from the pot temporarily.

  3. Add carrots, garlic, bok choy or celery, and onion. Cook until the onion starts to become translucent.

  4. Add broth, chickpeas, and seasonings. Bring to a simmer.

  5. Simmer for ~15 minutes, adding kale and quinoa about halfway through.

  6. Serve hot.
