Roasted Broccoli Cheddar Soup
  1. Coat broccoli in neutral oil and roast in oven for 15-20 minutes at 400°F

  2. While broccoli roasts, sweat down diced onions and minced garlic in a pot

  3. Add flour and butter to make a roux and cook down

  4. Add milk, carrots, and heavy cream to the pot

  5. Cook on low for about 10 minutes

  6. Add water or chicken broth to the pot

  7. Add roasted broccoli to the soup along with chicken bouillon and seasonings

  8. Cover and cook for an additional 5-10 minutes

  9. Add a pinch of nutmeg and the freshly shredded cheddar cheese

  10. Stir well and adjust seasonings to your liking
