In an airtight container, stir together the marinade ingredients.
Drain the tofu and gently squeeze to get rid of excess water.
Break the tofu into craggy hunks or cut into slices/cubes.
Drop the tofu pieces into the marinade and gently stir to coat.
Cover and refrigerate for 12–48 hours.
Preheat the oven to 375°F.
Transfer the marinated tofu to a baking sheet.
Bake for 30–45 minutes, shuffling halfway through until golden brown.
