30 Minute Skillet Enchiladas
  1. Dice onion, mince garlic, and measure out spices.

  2. Heat oil in a large frying pan, add diced onion, salt, and cook down for 3 minutes.

  3. Add tomato paste, spices, minced garlic, and cook for 30 seconds.

  4. Add fire roasted tomatoes, corn, beans, green chilies, chicken, broth, and simmer.

  5. Preheat oven to low broil, add apple cider vinegar, adjust seasoning, add tortilla strips, top with cheese, and broil until cheese is melted.

  6. Remove from heat and top with cilantro, avocado, and sour cream or plain greek yogurt.
