Brown the ground Italian sausage in a large pot
Add diced onion, celery, and carrots, sauté until softened
Add minced garlic and cook until fragrant
Stir in tomato paste and cook for 1-2 minutes
Pour in chicken broth and diced tomatoes with their juices
Add Italian seasoning, dried basil, red chili flake, garlic powder, and onion powder
Bring to a boil, then reduce heat and simmer
Add tortelloni and cook according to package directions
Stir in fresh spinach and cook until wilted
Stir in heavy cream if desired
Season with salt and pepper to taste
Serve hot, garnished with fresh parsley and optional sour cream, Calabrese peppers, or red chili flake
Serve with crusty bread
