Tortilla Breakfast
  1. Set pan to medium heat. Add butter.

  2. Sauté spinach and tomato until spinach is wilted.

  3. Add two eggs, mozzarella, salt, and pepper.

  4. When the egg is about 90% cooked, add the tortilla and gently press it down.

  5. Turn over the tortilla once the egg is ready.

  6. Reduce heat to medium and brown the tortilla slightly.

  7. Put it on a plate, roll it up, and serve it.
