Honey Glazed Carrots
  1. Preheat your oven to 425°F.

  2. Peel and cut the carrots on a diagonal, about 1 ½" in length.

  3. In a large mixing bowl, toss the carrots with the honey, butter, garlic, oil, salt, pepper, and spices if using.

  4. Pour the carrots and glaze onto a large baking sheet and spread them out evenly.

  5. Roast for 20-25 minutes. Toss halfway through with a spatula to ensure even cooking.

  6. Optional: broil for 2-3 minutes to get that extra char. Just keep a close eye on them so they don't burn.

  7. Transfer the carrots to a serving dish and garnish with fresh chives or parsley.
