Japanese Style Bagels
  1. Mix all ingredients together and knead for 10 minutes or until dough is smooth.

  2. Rise for 30 minutes in an oiled bowl.

  3. Divide into 12 equal balls using a weighing scale. Let rest for another 30 minutes.

  4. Flatten dough into a rectangle and roll up. Bring the 2 ends to meet to form a bagel shape. Let rest for 30 minutes.

  5. Add 1 tsp sugar to boiling water. Boil the bagel for 30 seconds on each side. Top with whatever you like - I used sesame seeds, mixed herbs and edam cheese.

  6. Bake at 200°C for 15 minutes.
