Start by cubing your chicken breast and placing in a large bowl. In a separate bowl, add all ingredients except chicken and mix well to combine. Pour ¾ of the marinade mixture over the chicken and mix so chicken is coated.
Heat large pan over medium high heat. Add a little bit of avocado oil to coat pan before adding chicken. Try not to crowd the pan, you may need to do two batches. Let cook for about 3 minutes without disturbing before flipping and cooking another 2-3 minutes, or until they are just about cooked through. Add remaining ¼ of your marinade, stir, and let cook for another minute or so to get nice and hot.
I use a rice cooker. After rinsing my rice, I add all ingredients to the rice cooker and cook on quick rice mode.
Add all ingredients to a food processor and mix until desired consistency.
