Place the apple slices and apple cider in a large pot over medium-high heat. Cover and bring to a boil.
Reduce heat and simmer 25 minutes stirring often until apples are soft.
Puree apples using a stand blender or metal immersion blender.
Stir in brown sugar and spices. Simmer uncovered over medium-low heat for 45 minutes or until thickened.
Remove from the heat and stir in vanilla. Cool 5 minutes, then puree again for a smooth texture.
Let cool before spooning into jars and placing in the refrigerator. Spread 2 tablespoons on toast or rolls.
