Prep apples (2 minutes) – Peel (or don’t!), core, and chop into small chunks.
Cook (6–8 minutes) – Melt butter in a skillet over medium-high heat. Add apples, brown sugar, and cinnamon. Stir frequently until apples soften and get golden and bubbly (about 5–7 minutes). Add vanilla at the end.
Serve immediately (1 minute) – Eat as is, or top with crumble topping (granola or crushed graham crackers), vanilla ice cream or whipped cream, or a spoonful of Greek yogurt.
