Orange & Poppyseed Yoghurt Loaf
  1. Preheat oven to 175 degrees C. Line a loaf tin and set aside.

  2. Combine dry ingredients into a mixing bowl and whisk together.

  3. Combine wet ingredients in a separate bowl and whisk well until light and fluffy.

  4. Sift dry ingredients into the wet and mix until just incorporated, being careful not to over-mix.

  5. Gently scoop half the mixture into a smaller mixing bowl, add poppyseeds and mix until just combined.

  6. Bake in oven for 40-50 minutes or until golden and a toothpick comes out clean when inserted into the centre. Set aside to cool.

  7. Once slightly cool, remove from tin and pour over orange juice. In a small bowl combine sugar and orange zest and rub together with your fingertips.

  8. To serve, slice and dollop with yoghurt, fresh orange juice and extra zest.
