Lazy Spanakopita Muffins
  1. Preheat oven to 350°F and spray a 12-slot muffin tin.

  2. Heat oil, sauté scallions 1 minute, add spinach until wilted.

  3. Cool spinach, transfer to towel, and squeeze out liquid.

  4. In bowl, whisk eggs, oil, and buttermilk.

  5. Stir in flour, baking powder, salt, nutmeg.

  6. Add spinach mix, dill, feta, and mozzarella.

  7. Fill muffin tin, sprinkle with parmesan.

  8. Bake for 23–25 mins or until golden. Let cool on rack.
