Preheat oven to 425°F. Line a baking tray and place a wire rack on top.
Mix cheese filling; stuff each chicken breast and seal with toothpicks.
Set up 3 bowls: one with flour + salt/pepper, one with eggs, one with panko + seasonings.
Dredge chicken in flour, egg, then panko. Press to coat well.
Drizzle with olive oil, bake 25–30 min until golden and 165°F inside.
Simmer glaze ingredients in a saucepan until smooth.
Drizzle glaze over chicken and broil 1–2 min to caramelize.
