Pat your chicken clean/dry with a paper towel, cut into small bite sized pieces.
Add butter to a deep sided skillet and then add the chicken. Sauté the chicken until fully cooked. Then add the seasonings. This is so you can taste and adjust. Note that there is salt and seasoning in the soup mix you will add so keep that in mind when seasoning. When you have the chicken seasoned and sautéed for about 5 minutes, carefully remove from the pan.
Make sure there is butter and chicken juice in the pan still, if not add some more butter and then add your washed and chopped broccoli. Sauté for about 10 minutes. I like my broccoli with some bite to it still, you can cook longer if you like it really soft.
When the broccoli is cooked, add the chicken back to the pan. Make sure you get those chicken juices in there too.
In a large bowl add half the package of the soup mix to the bowl. It will be about 6 ounces. This is about ¾ of a cup. It doesn't have to be exact, just close. Add four cups of water and whisk until smooth.
Pour the soup mixture over the chicken and broccoli. Bring to a simmer, reduce heat, cover and simmer for about 25 minutes. It will thicken but still be gravy like. Taste and adjust seasonings if needed. I wanted to add a little salt and pepper.
Serve over rice with a sprinkle of grated sharp cheddar cheese.
