Rumbledethumps With Extra Cheese
  1. Boil the potatoes until soft, then drain and mash with half the butter, the milk or cream, and plenty of seasoning.

  2. In a large pan, melt the remaining butter and gently cook the onion and cabbage for 10 to 12 minutes until soft and sweet.

  3. Add the garlic for the final minute and season.

  4. Fold the cabbage mixture into the mash along with the cheddar and chives.

  5. Taste and adjust seasoning.

  6. Spoon into a baking dish and scatter the cheddar over the top.

  7. Bake at 200°C (fan 180°C) for 20 to 25 minutes until golden, bubbling and crisp at the edges.

  8. Serve hot, preferably with something meaty or on its own.
