Prepare the Pad Thai sauce by melting Tamarind, Fish Sauce, and Palm Sugar together in a small pot.
Add Chilli powder to taste and simmer the sauce.
Soak the rice noodle until it's pliable.
Cook the protein (shrimps, chicken, or tofu) in the wok with a tablespoon of sauce.
Add the soaked noodle and a ladle of warm sauce to the wok.
Stir and cook until the noodle is soft.
Crack an egg into the wok and toss everything together.
Add the remaining ingredients (peanuts, chives, bean sprouts, etc.) and more sauce if needed.
Cook until the shrimps are done and then add a handful of garlic chives.
Serve the Pad Thai with condiments like lime, ground peanuts, extra chilli powder, etc.
Repeat the process to cook more portions in the wok.
