Olive Oil Braised Spring Vegetables
  1. Add the olive oil to a large skillet over medium-low heat.

  2. Add the long-cooking vegetables along with the salt, and allow to cook for a few minutes.

  3. Add the rest of the veg, then cover and cook for another 10 - 15 minutes until everything is silky and tender.

  4. Remove from heat and sprinkle with spring onions.

  5. Serve with the lemon wedges.
