Heat a pan on the stove with the olive oil
Add all of the ingredients (except spinach) into the pan
Pour in the coconut milk and broth, making sure the pasta is covered in liquid and isn't sticking out
Simmer the pasta, cover and cook for 8-10 minutes, until pasta is almost al dente
Remove lid, stir gently, and add a splash of water or broth if needed
Add 2 handfuls spinach once the pasta is cooked and let it wilt in the heat
