Whisk together 90g nonfat plain Greek yogurt, 90g light mayonnaise, 1 tbsp olive oil, 1 tsp kosher salt, and black pepper until smooth
Divide the base into three mason jars
For Classic Light Caesar: stir 1 tbsp Dijon mustard, 1 tbsp fresh lemon juice and zest, 2 tbsp finely grated Parmesan, ½ tsp anchovy paste, and extra black pepper into one jar
For Spicy Sesame Ginger: stir 1 tbsp low-sodium soy sauce, 1 tsp sesame oil, 1 tsp fresh grated ginger, 1 tsp brown sugar, 1 tsp rice vinegar, ½–1 tsp chili crisp, and a pinch of garlic powder into one jar
For Green Goddess: add ⅓ cup packed fresh cilantro, 2 tsp honey, 1 tsp apple cider vinegar, 60g avocado, and 1 clove garlic to one jar and blend using a food processor
Add up to 2 oz milk per jar to reach desired consistency
Store airtight in the fridge for 5–7 days
Shake or stir before using
