30-minute Pork Lettuce Wraps With Coconut Rice
  1. In a medium saucepan, combine the rice and coconut milk. Bring to a boil, then reduce heat to low and let simmer for 18-20 minutes, until the rice is cooked through and the liquid is absorbed.

  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.

  3. Add the ground pork, breaking it up with a spoon, and cook until browned and cooked through, about 5-6 minutes.

  4. Stir in the soy sauce, fish sauce, brown sugar, and red pepper flakes. Cook for another 2-3 minutes, allowing the flavors to combine.

  5. Remove the skillet from heat and stir in the chopped cilantro and mint.

  6. To serve, spoon the pork mixture into butter lettuce leaves. Top with a squeeze of lime juice.
