In a medium saucepan, combine the rice and coconut milk. Bring to a boil, then reduce heat to low and let simmer for 18-20 minutes, until the rice is cooked through and the liquid is absorbed.
In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
Add the ground pork, breaking it up with a spoon, and cook until browned and cooked through, about 5-6 minutes.
Stir in the soy sauce, fish sauce, brown sugar, and red pepper flakes. Cook for another 2-3 minutes, allowing the flavors to combine.
Remove the skillet from heat and stir in the chopped cilantro and mint.
To serve, spoon the pork mixture into butter lettuce leaves. Top with a squeeze of lime juice.
