Sourdough Apple Coffee Cake
  1. Preheat the oven to 350°F.

  2. Peel and dice 2 apples into small cubes and pour lemon juice over them to avoid darkening.

  3. Place eggs and sugar in a large bowl and mix together with a mixer until the mixture is light and fluffy.

  4. Add sourdough starter, sour cream, vanilla, and melted butter and mix.

  5. Sift the flour, salt, and baking powder together. Carefully mix with a spatula.

  6. Stir in the diced apples. Make sure not to accidentally pour lemon juice along with them. The batter should be thick.

  7. Pour the mixture into the 9" springform covered with parchment paper and greased with oil or butter. Distribute the batter evenly with a spatula.

  8. Cut the rest of the apples into thin slices about ⅛ in thick. Do not peel; just remove the core. Add a little bit of lemon juice.

  9. Decorate the top of the cake by pressing the apple slices into the batter in a circular manner overlapping one another.

  10. Sprinkle cinnamon and brown sugar on top.

  11. Bake at 350°F for about 1 hour, until a wooden pick inserted in the center comes out clean. Let the cake cool completely before serving.

  12. Dust it with a tiny bit of powdered sugar.
