  3. In a bowl, mix ricotta, Gruyere, thyme, garlic, parsley, salt, and pepper until smooth.

  4. Spread the cheese mixture evenly over the pastry, staying within the border.

  5. Top with drained artichokes, drizzle with a little olive oil, and sprinkle with chili flakes (if using).

  6. Brush the edges with beaten egg and sprinkle with sesame seeds.

  7. Bake for 15-20 minutes, until puffed and golden.

  8. Finish with a pinch of sea salt, pepper, and extra thyme if desired. Let cool for 10 minutes, then slice and serve warm.
