Pat the chicken dry with paper towels. If using whole breasts, place them evenly in the baking dish. If using cubed chicken, spread the pieces in a single layer.
Heat 1 tablespoon olive oil in a small pan over medium heat. Add the minced garlic and cook for about 30–45 seconds until fragrant. Remove from heat.
In a mixing bowl, combine sour cream, mayonnaise (or Greek yogurt), grated Parmesan cheese, garlic powder, salt, black pepper, and paprika.
Stir the sautéed garlic and chopped spinach into the creamy mixture until well combined.
Spread the creamy spinach mixture evenly over the chicken in the baking dish, covering all pieces.
For a richer flavor, sprinkle an additional 2–3 tablespoons of Parmesan cheese over the top.
Place the dish in the preheated oven and bake for 30–35 minutes, or until the chicken is cooked through and the top is lightly golden.
Ensure the internal temperature of the chicken reaches 165°F (74°C).
Let the dish rest for 5 minutes before serving. Garnish with fresh parsley if desired and serve warm.
