Add ¼ cup or 2 servings (40g) of gelatin into mixing bowl with ⅔ cup of water. Lightly mix or swirl and set aside to let it bloom.
In saucepan, add 1 cup allulose, ½ cup water, and 1 serving vanilla bean paste. Continuously stir for a few minutes until liquid is bubbling/golden.
Add hot liquid to mixing bowl containing the gelatin. Mix with standing or hand mixer for 10 minutes or until it becomes fluffy like marshmallow.
Add to a container and put in the fridge until it sets.
