Mango And Coconut Cake With Cream Cheese Icing
  1. Preheat the oven to 180°C.

  2. In a bowl, mix flour, baking powder, baking soda, and salt.

  3. In another bowl, mix sugar with coconut oil, then add eggs and vanilla extract.

  4. Combine the wet and dry ingredients, alternating with coconut milk.

  5. Stir in mango purée and shredded coconut.

  6. Pour the batter into a 20 cm cake pan and bake for 35 to 40 minutes.

  7. For the icing, beat together cream cheese, mango purée, butter, icing sugar, and vanilla extract.

  8. Once the cake has cooled, spread the icing over the top and sides.
