Honey Lemon Chicken Recipe
  1. Pat the chicken dry with paper towels. Season both sides with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken from skillet and set aside.

  3. In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant but not burnt.

  4. Pour in the lemon juice, chicken broth, honey, lemon zest, and soy sauce (if using). Stir well and bring to a simmer.

  5. If you want a thicker sauce, stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.

  6. Put the chicken back into the skillet and spoon the sauce over the top. Cook for another 2-3 minutes, allowing the chicken to absorb the flavors.

  7. Garnish with fresh parsley or thyme if desired. Serve hot with rice, quinoa, or steamed vegetables.
