Waldorf Chicken Salad
  1. Preheat your oven to 400

  2. Add a drizzle of avocado oil to your chicken breasts and generously season on both sides with salt and pepper

  3. Heat an oven-safe skillet over medium high

  4. Add a drizzle of avocado oil

  5. Once the oil is shimmering, add your chicken and cook, undisturbed, for 4 minutes on each side

  6. Transfer to the oven and roast for another 9 minutes

  7. Remove from oven and let cool before cutting/shredding into bite-sized pieces

  8. Once your chicken has cooled and you are ready to assemble your chicken salad, whisk together the lemony yogurt dressing and set aside

  9. Add your celery, grapes, and apples to a large bowl and toss with your lemony yogurt dressing

  10. Add your cooked and cooled chicken and walnuts to the bowl and toss to combine

  11. Taste and season with salt and pepper
