Ghormeh Sabzi
  1. Dice an onion and grind garlic

  2. Slice stew meat into 1 inch pieces

  3. Saute the onion and garlic until fragrant

  4. Add the meat and brown for about 10 minutes

  5. Season with turmeric, black pepper and salt

  6. Add water, partially cover and simmer for 1 hour

  7. Poke holes in dried limes and add to the pot

  8. Partially cover and simmer for another hour

  9. Cut up spinach, cilantro, parsley, and green onion

  10. Fry the herbs in olive oil for 10-15 minutes until majority of water releases

  11. Add dried fenugreek to the herbs

  12. Drop the herb mixture and red kidney beans into the stew

  13. Partially cover and simmer for a final hour

  14. Plate with saffron rice or tadig and serve
