Dice an onion and grind garlic
Slice stew meat into 1 inch pieces
Saute the onion and garlic until fragrant
Add the meat and brown for about 10 minutes
Season with turmeric, black pepper and salt
Add water, partially cover and simmer for 1 hour
Poke holes in dried limes and add to the pot
Partially cover and simmer for another hour
Cut up spinach, cilantro, parsley, and green onion
Fry the herbs in olive oil for 10-15 minutes until majority of water releases
Add dried fenugreek to the herbs
Drop the herb mixture and red kidney beans into the stew
Partially cover and simmer for a final hour
Plate with saffron rice or tadig and serve
