Smashed Brussels Sprout + Potato Salad
  1. Wash and prep the Brussels sprouts and potatoes then boil the potatoes. Start in cold water then once boiling cook for around 25-30mins or until tender.

  2. Steam the Brussels as they take up a lot of water, you can boil them but will need to let them air dry before using.

  3. Smash the sprouts and potatoes using a cup (lined with baking paper so it doesn't stick) over a lined tray then season with oil, salt and the spices and cook @ 200° until crispy.

  4. Mix the ingredients for the dressing, add the cooled veggies then combine before dressing with the garnishes. Now tuck in and enjoy!
