Preheat oven to 450F
Wash and peel the outside layer of a medium butternut squash (you'll need a good peeler for this, or you can pierce the skin and microwave it for a few mins to soften it)
Peel the whole squash until you get to the seeds, then spray light oil on a baking sheet and toss on your peels with cumin, salt, parsley and onion powder. (I made 2 batches with this squash, it makes a LOT, so be sure not to over layer on the pan for even cooking)
Bake for 15mins at 450F - you can broil for the final 2 mins to crisp the edges a bit if you want as well!
Remove from the oven and lightly drizzle pomegranate molasses on top(too much will overpower it), and sprinkle on walnuts and fresh parsley then serve!
