Tex-Mex Stuffed Peppers
  1. preheat oven to 350. Cut peppers in half lengthwise, remove seeds and discard stems. Boil pepper in a large pot for 3-5 minutes. Drain and rinse in cold water.

  2. In a large bowl, combine all ingredients (rice, meat, beans, seasoning, tomatoes, rotel, tomato sauce)

  3. Cover and bake for 30 minutes. Uncover, sprinkle with cheese, pop back in oven to let it melt.

  4. Serve- I usually eat 1.
