Cowboy Potatoes
  1. Cook Bacon Preheat oven to 425°F. In a large skillet, cook bacon until crisp, about 8 minutes. Reserve 3 Tbsp. bacon drippings, adding olive oil if needed to make 3 Tbsp. Drain bacon on paper towels. When cool enough to handle, crumble bacon.

  2. Prep Potatoes In a large bowl, toss potatoes and onion with reserved bacon drippings, salt, pepper, paprika, and garlic powder. Toss to combine. Spread on a 15x10x1-inch baking pan.

  3. Bake Bake 45 minutes or until tender and crispy; stirring after 30 minutes.

  4. Add Sauce Drizzle potatoes with barbecue sauce. Sprinkle with cheese. Bake 5 minutes more or until cheese is melted.

  5. Finish and Serve Sprinkle with bacon, jalapeño, and green onions. Serve with sour cream.
