Japanese Potato Salad (ポテトサラダ)
  1. Cook potatoes by steaming or boiling until soft

  2. Peel potatoes while warm and lightly mash

  3. Slice cucumber, salt and massage, then squeeze out water

  4. Boil carrot (50 g) and chop into smaller pieces

  5. Thinly slice onion (½), salt lightly, soak for 5 minutes, then squeeze

  6. Cut ham into small pieces

  7. Boil eggs for 12 minutes

  8. Separate egg yolks and whites, cube the whites, and reserve yolks for topping

  9. Mix wine vinegar (50 ml), olive oil (150 ml), mustard (½ tbsp), salt and pepper to make dressing

  10. Use 4 tbsp of dressing and mix with mashed potatoes

  11. Add vegetables, ham, egg whites, and Kewpie mayo to the potato mixture and mix gently

  12. Chill before serving

  13. Crumble egg yolks on top before serving
