Preheat your oven to 425°F
Peel your carrots and cut them at a diagonal, cutting bigger carrots in half lengthwise or fourths, and leaving skinnier carrots whole
Set carrots aside in a large bowl
In a small bowl mix together the melted butter, olive oil, brown sugar, salt and pepper
Pour the mixture over the carrots and mix
Pour the carrots on a cookie sheet and space them out
Bake for 20 minutes then pull out and stir them around
Put them back in and bake for another 10 minutes
Pull out and stir to get them fully coated
Pour onto your platter before it starts sticking to the pan
Crumble on some goat cheese and parsley
