Lay a portion of the corn chips on a tray and then layer with beef, queso, corn, onions, and chilli, repeat until all ingredients are used.
Top with guacamole (mix together the avocado, lemon, salt, pepper and Tajín) and sour cream, finishing with a sprinkle of Tajín!
Melt the butter in a saucepan.
Once melted, add the flour and whisk until smooth.
Gradually whisk in the cold milk, and when it starts to bubble, whisk in the cheese.
Season with salt and pepper.
In a large frying pan, heat the olive oil and add the meat.
Break the meat up well, then season it with all the spices.
Cook for 4-5 minutes until fully cooked.
