  1. Place the green onions, ginger, (shallots and garlic if using) in a deep heat proof bowl and set aside.

  2. In a small pot, heat the oil over medium heat until it reaches 275°F. Remove the pot from the stove and very carefully pour over the green onions – they will sizzle and bubble up. Stir in salt to taste and let sit for 1 hour for the flavors to meld and mellow out. Stir in a drizzle of toasted sesame oil, if using. Eat on top of everything.
