Mix cottage cheese, maple syrup, vanilla, and melted butter until smooth
In another bowl, combine oats, oat flour, cinnamon, baking powder, salt, brown sugar, and nutmeg
Pour wet into dry and mix until a thick dough forms
Let sit for 5 minutes so oats absorb moisture
Scoop onto baking sheet and flatten slightly
Bake 12–15 minutes until lightly golden
