Preheat oven to 400°F.
In a bowl, mix breadcrumbs, parmesan, italian seasoning, paprika, salt, and black pepper.
Dip chicken cutlets in beaten eggs, then coat in breadcrumb mixture.
Place on a baking tray and drizzle with olive oil.
Bake for 20-25 minutes until golden and crispy.
Remove from oven and sprinkle feta cheese over the top.
In a small saucepan, heat honey with lemon juice, chili flakes, and lemon zest.
Drizzle the hot honey lemon glaze over the chicken.
Garnish with fresh parsley and extra lemon zest.
Serve warm.
