Oyster Stew
  1. In a large pot, melt butter over medium heat. Add onion and celery; cook until softened, about 5 minutes.

  2. Stir in garlic and cook for another minute until fragrant.

  3. Gradually pour in the milk, stirring constantly, and bring the mixture to a gentle simmer. Do not boil.

  4. Add the oysters and their liquid. Season with salt, pepper, and cayenne pepper if using.

  5. Simmer the oysters gently until their edges curl, about 3–4 minutes.

  6. Remove from heat and stir in fresh parsley. Adjust seasoning to taste.

  7. Serve hot with crackers or crusty bread for dipping.
