On a baking sheet, mix together your cabbage and chickpeas. Season with salt and pepper and spray with oil.
On another baking sheet, lay out the cauliflower, spray with oil and season with salt, pepper and paprika.
Bake both of the tray on a 450F oven for about 20 minutes till roasted.
In a separate bowl mix all your dressing ingredients together till you have a beautiful creamy mixture.
I like to plate my salad with the dressing separately, this way I can save the leftovers for the next day without it being soggy.
Add the dressing to your plate. Top with all the hot and cold veggies. Garnish with the nuts and then enjoy!
