Spicy Korean Cucumber Salad (Oi Muchim)
  1. Place the thinly sliced cucumbers in a bowl and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture. Drain and pat dry.

  2. In a small bowl, mix together the gochugaru, minced garlic, soy sauce, rice vinegar, sugar, and sesame oil.

  3. Pour the dressing over the cucumbers and toss to coat. Add the chopped green onion and sesame seeds, and toss again.

  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
