Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with olive oil.
In a mixing bowl, combine cottage cheese, egg, almond flour, garlic powder, salt, and Italian seasoning. Mix until it forms a sticky dough.
With floured or wet hands, form small bite-sized balls and place them on the prepared baking sheet. Flatten slightly for more crispiness.
Bake for 18–22 minutes, or until golden brown and firm.
Let them cool for a few minutes. Serve warm as a snack or appetizer.
