Biscoff Cheesecake
  1. For the biscuit base, mix 350g of biscuits (a mix of chocolate digestives and biscoff biscuits) with 100g of melted butter.

  2. For the cheesecake, use 800g of full fat cream cheese, 150g of icing sugar, 1 tsp of vanilla extract, 2-3 tbsp of biscoff spread, 150ml of double cream, and 80g of crushed biscuits.

  3. For the ganache, melt 150g of white chocolate chips, 100ml of double cream, and 1 tbsp of biscoff spread in the microwave on 500w in 30 second intervals until melted.

  4. Let the cake set in the fridge overnight before putting the ganache on top.
