Alsatian Apple Tart
  1. Preheat the oven to 375ºF (190ºC).

  2. In a large bowl, mix the flour, butter, sugar, and salt with your fingertips until the butter is in pieces about the size of peas.

  3. Quickly stir the water into the mixture and then gather up the dough onto a sheet of plastic wrap and press it into a flat dish shape.

  4. Refrigerate dough for 1 hour.

  5. Butter the bottom and side of a tart pan with a removable bottom.

  6. Roll the dough out onto a lightly floured surface into a circle.

  7. Roll the dough up onto your rolling pin and then unroll it directly onto the pan.

  8. Layer the apples on the bottom of the dough.

  9. In a bowl, mix the eggs and sugar, add the cream and the vanilla extract.

  10. Pour on top of the apples and bake at 375ºF (190ºC) for 50 to 55 minutes.
