Add a bunch of raw garlic cloves to a baking dish with some olive oil, rosemary, red pepper flake and salt
Roast low and slow until the garlic is golden brown and totally smooshable
Remove the rosemary and reserve about half the garlic and as much oil as you'd like
Smoosh the rest of the garlic in the oil, add a healthy splash of salt, starchy pasta water and whisk till creamy
Toss the roasted garlicky sauciness with your favourite al dente pasta
Top with pecorino and parsley
