Drain the tuna fish and flake it into a large bowl.
Add a couple of big spoonfuls of your favorite spreadable condiment.
Add seasonings like lemon zest, herbs, capers, shallot, garlic, and spices. Season with salt and black pepper.
In the empty space of the bowl, crack 2 large eggs and lightly beat them.
Add about ¼ cup of bread crumbs and mix until just combined.
Test the mixture to see if it holds together; add more crumbs if necessary.
Divide the mixture into 4 portions and shape each into patties.
Chill the patties for at least 10 minutes or up to 1 day.
Heat oil in a nonstick skillet over medium heat until shimmering.
Fry the patties until deeply golden brown and crispy, about 2–4 minutes per side.
Serve with a squeeze of lemon juice or additional condiment.
